OFFICIAL RULES
- All Chili must be cooked on site from “SCRATCH” the day of the event.
- “SCRATCH” is defined as starting with raw meat, no marinating is allowed. Commercial chili powder and spices are permissible, but complete “Chili Mixes” (just add water types) are forbidden.
- NO Fillers in competition Chili- beans, rice, pasta and similar ingredients are NOT allowed. Finely chopped vegetables are OK… Peoples Choice and Fireman’s Chili are allowed fillers and whatever… Most cooks make 1 small pot for competition and one large pot for Peoples Choice…
- Cooks are responsible for complying with all Monroe County Health Department regulations inclusive of Certification in Level 1 or 2 Food preparations. Un-certified Cooks must note so on the application. A $10 fee will be required to cover the cost of additional Personnel. Cooking conditions are subject to inspection and approval by designated Referee’s. Cooks may be requested to TASTE their own chili at the discretion of the Head Judge. Failure to comply may result in disqualification...
- ONE CHILI PER COOK- Each head cook is responsible for preparing one pot of chili that they intend to be judged, and to turn-in one judging cup from that pot. (Fireman’s & Peoples Choice excluded)
- LITE FIRES- it is up to each cook to begin cooking as to co-ordinate there turn-in time of 2pm. You may begin as early as 8am. No cooking may begin without approval by a Judge or his designate.
- PENALTIES- Failure to comply with these rules may result in disqualification. All decisions of the official will be final.
